These are vulnerable points that cause intense pain when struck, these vital points are lack of strong protective muscle and can’t be strengthened with training. No matter how strong your opponent is, they will be knocked out if you land a blow on these weak spots.
“Why aren't the nose and stomach classified as vital point targets?”
Many pro fighters have their nasal bones removed (via surgery paid by their organization or sponsors) so they no longer feel pain when punched there.
Their Abs muscles are also conditioned to be hard - strong, making them resistant to any punches and kicks.
We can never know how strong our opponent is, if there is any opportunity to strike then it is best to aim the weak targets that guarantee the KO.
“Why there is also no high kicks?”
High kicks to head is powerful - painful technique but it also high risk for yourself, because your balance is unstable and the opponent can do counter attack to your opened lower areas (not recommended for beginners).
No problem if you feel sure to use it in the fight, but don’t force yourself to use it too much.
